Herdade do Cebolal
Portugal
South of Lisbon, a few kilometers from the Atlantic, lies Herdade do Cebolal - a family estate rooted in the Alentejo coast since 1890. Five generations have worked this land, today Isabel and her son Luís guide the project, while the sixth is already growing up between barrels and rows of vines.
They also have a unique project with some bottles aged underwater off the coast, exploring how ocean conditions influence wine.
Located in Setubal region close to Lisbon area, winery uses the proximity to the body of water to the fullest: in every bottle you can feel high minerality, cool freshness of Atlantic winds and vibrancy on the edge of straightforward salinity.
Restorative viticulture, by the way, is seriously cool thing - for example, Luis replanted forest back into farmland.
