Grapes are harvested by hand at peak maturity and arrive in the cantina for crushing and destemming, then they are loaded in the press to gently extract the juices and left for a day without sulfites to to hyperoxygenate the must. Orange without maceration, warm wood notes with yellow stone fruits.
