Dark Ages

Weird name is a reference to a moment when Filip had been doing tasting straight from the barrel and noticed it’s just the same process a medieval monk would do in ‘Dark Ages’, like nothing changed, only time flew. Cheers to old-fashioned methods!

A blend of Gruner Veltliner and Riesling, grapes on skins for 24 hours, the must fermented in wooden barrels, aging for 10 months. The entire wine production process is bottled without the addition of sulfur. Specifically bottled with lees, suitable to be shaken before serving or can be decanted and served clean.
