After fermentation and malolactic, it is aged 6 years and 3 months “under veil” (voile de levures) in 228 L casks without topping up which is the hallmark aging method for Vin Jaune. Because of the long “sous-voile” aging, this wine expresses the signature oxidative / nutty / mushroomy / saline profile that makes Jura’s Vin Jaune unique.
