Le Graine Sauvage – Guardian of the Vines
Sybil treats her vineyard like a living being. No synthetic chemicals, only natural care and sometimes the best intervention is… none at all. Each year, she challenges herself to use as few treatments as possible, while permanent grass keeps the soil and its microbiology alive. Trained as a scientist but guided by intuition, she adapts, learns from mistakes, and lets the vines speak for themselves.
The Mission of White
At Le Graine Sauvage, whites take center stage. Schist soil, high altitude, and pure passion create wines that express their terroir fully. Unmanipulated, without added yeast or sulfites, each bottle is unique. Sybil even cultivates half a hectare of old local white varieties in a tiny “biodiversity garden,” experimenting to find the grapes that thrive best in Faugères—while keeping climate change in mind.
Wild-hearted and fearless, Sybil Baldassarre is quietly shaping the future of Faugères whites - making wines that are honest, distinctive, and impossible to forget.
