Pastrami is traditionally a Jewish-Hungarian delicacy that used to be made from goose and nowadays you more often find from beef. The geese that are used for this pastrami are shot in North Holland. After plucking, the fillets are first brined in home-made brine. After they get a home-made herb crust and are smoked and cooked on wood fire. Delicious with a drink, on a sandwich or with a salad.
