I have no added sugars, preservatives, artificial colors nor am I diluted with water, pasteurized and filtered. Matured by a gradual process of lactic fermentation directly in the bottle. I do not contain alcohol and can age like wine. I am 100% birch sap

Remember Furmint

Kolfok is from the local Burgenland dialect, translating to “misfit”. A name given to Stefan from his grandfather when he didn’t go to church on a Sunday. Remember Furmint is a nod to Burgenland's past - yellow fruits with fine and integrated acidity.

Curtimenta

This Curtimenta shows classical skin contact aromas on the nose, like tea leaves and lemongrass. In the mouth it's similar vibes, juicy with a herby undertone and just the right amount of acidity, soft tannins and a firm finish with hints of citrus peel

Gerbera

The viognier and pinot gris were co-fermented (90% destemmed, 10% whole bunches) for 12 days. The Pinot Noir fermented as whole bunches. Pressed, blended and then aged in barrels 8 months and in steel for one more month

Camaleonte

Delicate and elegant rosé with hints of strawberry, wild blackberry and marzipan. Complex and yet still remains fresh, layered with a unique brininess.

Peacock Syrah

An oaky South African red with a taste of blueberries, blackberries and cassis. Full, supple and perfect for cold wintery evenings

Contact

Skin fermented Chenin Blanc, matured in terracotta amphora. Intense nose with notes of orange and stone fruit. Dry but full on the fruit, with a spicy undertone

Tradition Rot

Incredibly easy to drink vibrant red blend, especially when splashed around lightly chilled. Jam packed full of vibrant red and black fruit, a bit of herbal stuff and plenty of refreshing acidity.

Savagnin

This beauty from the Jura will take you on a journey! A deep and structured Savagnin full of oxidation, beeswax, walnuts and a fresh minerality with notes of pear.

Valpolicella Ripasso

After a first fermentation, a second fermentation follows with the grape skins that were used to make Amarone. Then 24 months of maturation in oak barrels. Powerful, with hints of candied fruit. Full and round, yet supple.

7 Apples

These 7 apples are from Filip's friend Johan Moscon's biodynamic farm. The Granny Smith and Maschansk apples create a dry, fruity, funky and somewhat acidic cider with elegant bubbles.

100% birch sap and macerated skins of Sauvignon & Cabarnet Franc. No added sugar, water, preservatives and yeast cultures. Unpasteurized & unfiltered. Co2 and cloudiness was created by the gradual process of lactic fermentation directly in the bottle.

13Muffato

Born almost by chance. After the Jura model but with nuances of Marsala. In 2013 the barrel was forgotten in the cellar, allowing mould and flore to form on the surface, naturally protecting the wine. Vanilla hints and a warm, dry and slightly salty taste

Pupo Zero Rosato

The summer in your glass with this intense fresh Aglianico rose! Ripe berries, wild strawberries and raspberry with a funky twist of truffle, smoke and dried oregano. This wine also forms the base for the Panko Pink pet nat

Windswept Sauvignon Blanc

This is an easy drinking seaside Sauvignon Blanc, fresh and zesty with grassy and dry bay leaf aromatics and just a touch of green pepper, pineapple and lemon
